I was thinking about some of the recipes I’ve made this year and this Broccoli Cashew Salad is pretty much the biggest surprise of the year. As far as broccoli goes, I’m pretty neutral about it. Yes, I know it’s good for you but it’s never been up there on my list of favorite things to eat until I made this recipe and now I’m a total convert. PERFECT as a side dish, but even better as a meal during a busy week. It keeps for days in the fridge and once you make it, I’m pretty sure you’ll never think of broccoli the same way again.
