This Chipotle Pasta Skillet recipe is bursting with flavor!

This easy skillet pasta dinner is a hit with my boys! The noodles are cooked in the skillet. Then the cooked ground beef, vegetables, and chipotle seasonings are added to the noodles.

You can season this Mexican pasta skillet with chipotle seasoning or use taco seasoning to create a less spicy taco pasta skillet. Here is our chipotle seasoning recipe. And this is our taco seasoning recipe.

If you use pre-cooked ground beef then it not only reduces the cooking time, it makes this ground beef pasta skillet recipe a one-dish dinner. I like to batch cook ground beef ahead of time and then store it in the refrigerator or freezer for future use. Here are directions for batch cooking ground beef in a slow cooker.

At the very end of the cooking process, I put the skillet under the broiler to quickly melt the cheese. This step is optional as the cheese will begin to melt as it sits on top of the hot noodles.

Chipotle Pasta Skillet Recipe

PREP-AHEAD TIP: Make the chipotle seasoning and cook the ground beef ahead of time.

Ingredients:

  • 2 cups vegetable broth
  • 1 cup water
  • 16 ounces rotini pasta*
  • 2 cups cooked ground beef
  • 15 ounce can of diced tomatoes with juice
  • 15 ounce can of corn, drained
  • 1 red or green bell pepper, diced
  • 1 jalapeno pepper, deseeded and diced (optional)
  • 3 green onion, thinly sliced
  • 1 stalk of celery, thinly sliced
  • 1 tablespoon chipotle seasoning or taco seasoning
  • 1 cup shredded Monterey Jack cheese

Directions:

1. Add 2 cups of broth, the water, and pasta to a skillet or other oven-safe pan. Cook over a high flame until it reaches a boil. Lower the flame, cover with a lid, and simmer for 8 minutes or until most of the liquid has been absorbed and the pasta is al dente.

2. Preheat the broiler.

3. Add the cooked ground beef, diced tomatoes with juice, corn, diced peppers, 2 of the green onions, celery, and chipotle seasoning.

4. Stir until the ingredients are thoroughly combined.

5. Cook over a medium flame for 3 -4 minutes or until the meat and vegetables are heated through.

6. Top with shredded Monterey Jack cheese and the remaining sliced green onion.

7. Place the pan 4 – 6 inches below the broiler. Broil for 2 – 3 minutes or until the cheese is melted and begins to brown.
